Rice Mixes


Today I would like to share 4 rice mixes with you

Ingredients


    ONION RICE MIX

    2 cups uncooked white rice
    1 envelope onion soup mix
    1 teaspoon dried parsley
    1/2 teaspoon salt

    LEMON-DILL RICE MIX

    2 cups white rice
    3 teaspoons bottled dried lemon peel
    2 teaspoons dried dill
    1 teaspoon dried chives
    1 teaspoon salt
    4 teaspoons chicken bouillon powder

    VEGETABLE RICE MIX

2 cups white rice
4 teaspoons vegetarian bouillon powder
1 teaspoon salt
2 teaspoons dried celery flakes
2 teaspoons onion flakes
2 teaspoons green pepper flakes
2 teaspoons red bell pepper flakes


    SPANISH RICE MIX

2 cups white rice
1/4 green bell pepper flakes
2 teaspoons parsley flakes
2 teaspoons salt
1/2 teaspoon dried basil

Directions

  1. FOR EACH TYPE OF RICE MIX:.
  2. Mix together all ingredients.
  3. Divide in half and store in tightly closed plastic bags or jars with tight-fitting lids.
  4. Each package or jar should contain approximately 1 cup plus 3 Tbs of rice mixture.

    To Cook
    Combine the rice Mixture, 2 cups of cold water and 1 Tablespoon of butter in a heavy saucepan. Bring to a boil over high heat.  Cover and cook over low heat 15 minutes or until liquid is absorbed.
    Makes 4-6 Servings

    1. You can make it without butter or you can "CAN" butter...it has about a 5 year shelf life. Also a company sells canned butter that has a longer shelf life however I prefer to do my own.

    3. You can actually can butter in little 1/2 pint jars and take it with you.

    5. I don't refrigerate butter. I keep it on the counter. Put butter in a small plastic container or jar.

  2. Isn't there a dehydrated butter product in a spice-type bottle available? Couldn't that be added to the dry mix so it would truly be "add water only"?

    1. There is a butter powder many other meals in a jar call for. I’m going to use that.

  4. Anonymous #1 - You can use oil if butter is not available. If you happen to be stranded in the woods with just you're rice mixes, you've done some horrible planning. In a pinch, you could also use the drippings of any meats you are cooking as well.
    Anonymous #2, yes there is a dehydrated butter product. I would store it in a airtight sealed bag for long term storage though.
    Anonymous #3, they should store as long as it's kept in an airtight dry environment. White rice properly kept keeps a very long time, brown rice not as long. If using brown rice, I would suggest using an food saver type bag and storing the mixes in your freezer. For intended long term storage, I would also seal the seasonings in a small bag and mix into rice as used. At home, I keep the mixes in a jar in the pantry.

    1. I would imagine that as long as you had vacuumed sealed that it would last a very long time.

  7. I like the idea of this recipe but was wondering is giving as a gift, what about adding a can of mixed vegetables.

  8. probably could add a drained can of veg-all when nearly done cooking. Sounds kinda good actually.
